Ingredients :
·
2 cups of Poha (Flattened Rice)
·
2 tsp of oil
·
Pinch of asafetida
·
½ tsp of mustard seeds
·
2 small potatoes (diced)
. 1 tomato (optional) (diced)
·
½ cup of Peanuts
·
3-4 green chilies
·
3-4 curry leaves
·
½ lemon
·
Salt to taste
·
Sugar to taste
How to prepare :
-
Take 2 cups of Poha in a Colander or a steel
utensil / plastic bowl
-
Wash poha nicely in running water for 2 to 3
times till the drained water comes clean
-
Soak poha with little water in a vessel (this
process helps poha to remain soft and not let it dry)
-
In a Nonstick Pan or Kadhai take 2 tsp of Oil
-
Once the oil is hot enough add curry leaves ,
green chilies and sauté
-
Add mustard seeds and let it splutter , add asafaetida and sauté
-
Add Peanuts and sauté
-
Add diced potatoes, tomatoes and little salt (just
to cook the potato) and mix.

Turn the flame on medium high and close the lid
-
After 2 minutes check the potatoes as they must
have become little crispy and brown
-
Peanuts will also be brown by now.

Add soaked Poha to the tempering
-
If the poha seems to be dry sprinkle little
water on top of it
-
Add salt and sugar to taste and mix everything
well upside down and close the lid
-
Let the poha get properly cooked on a medium low
flame for 2 more minutes
-
Open the lid mix everything well and decorate it
with lemon or tomato
-
Serve Hot with tea or coffee
