Palak Paneer
Preparation Time : 15 mins
Cooking Time: : 20 mins
Ingredients :

9 Oz. of
Spinach (around 250 gms)
·
9Oz. of Cottage
cheese / Paneer (around 250 gms)
·
3 – 4 cups of
Water
·
1-2 cloves of
garlic
·
2 green chilies
·
1 medium onion
chopped
·
3 tsp of oil
for frying paneer
·
2 tsp of Butter
·
1 tsp of Garam
Masala
·
1 tsp of red chili
powder
·
½ tsp of Cumin
Seeds
·
½ lemon the
squeeze
·
Salt to taste
How to prepare:
·
Wash and rinse the
Spinach in water for 2-3 times and keep aside.
·
You may want to
keep the spinach stems if they are good but if they are hard then discard the
stems.
·
Boil 3-4 cups
of water and add Spinach to it and let it boil for 3-4 mins in the water (Close
the lid) and turn off the gas.
·
Let the spinach
be in hot water for around 2 more mins.
·
In A Bowl add 2
cups of water and add few ice cubes into it
·
Strain the
spinach from Hot water and put it in ice cold water for some time (this process keeps the spinach green)
·
Grind the Spinach
in puree.
·
Take a Nonstick
pan, add 3 tsp of oil and put the flame on medium high.
·
Cut the Paneer
cubes in 6-8 or more pieces and once the oil is hot enough fry the paneer cubes till you get the light brown
crisp look of Paneer from both the sides.
·
Remove the
fried paneer from the Pan
·
Add 2tsp of
butter and once it melts add ½ tsp of Cumin Seeds and let it splutter
·
Add green chilies,
garlic cloves and sauté on a medium low flame.
·
Add onions and sauté
till then turn pink or brown.
·
Add Spinach Puree
and mix everything well.
·
Add salt, chili
powder, garam masala mix well
·
Add little
water if required (optional). If you like your gravy thick don’t add water
·
Simmer the
gravy for 2-3 mins and off the flame
·
Add Paneer
Cubes on top of the gravy.
·
You may add cream
on top if required (optional).
