Semolina or Rava Upma Recipe

It is agood morning or evening breakfast.

Weekends we even prefer to have it as a brunch or dinner too

Yes ! We are talking about Healthy and Delicious Semolima Upma :)

Preparation Time : 15 mins

Cooking Time      : 20-25 mins

Serves                 : 4

Ingredients :
1 cup Semolina (Rava)
2 cups water
4 green chilies
5-6 curry leaves
1/2 medium size onion diced
1/2 medium size tomato diced
3 tsp of green peas (frozen or fresh)
3 tsp of urad dal
3 tsp of peanuts
2 tsp of oil / ghee
2 tsp of cashews
2 tsp of raisins
1 lemon
salt to taste
sugar to taste (optional)

How to prepare :

- Roast semolina in an empty nonstick wok or kadhai till it turns golden brown on a      medium low flame. Make sure you roast continuously or it may stick at the bottom of the pan and will spoil the taste of upma if it is burnt.
- it may take aroud 10 mins for semolina to get roast
- Remove the roasted semolina in a plate and keep aside
- Heat ghee / oil in the same pan ( I have used both ghee and oil)
- Add curry leaves first and then green chilis and roast them for a minute
- Add urad dal and once it turns little brown add peanuts to it and roast again
- Urad dal and peanuts should turn golden brown
- Add onions and once they turn pink / brown add green peas and tomatoes and roast again
- Once the tomatoes turn soft add water to it and mix everything nicely
- Let the water boil on a medium high flame now (it may take approx 5 to 7 mins)
- Add salt, sugar, squeeze lemon , Cashews and raisins and mix in water. Mix the water nicely.
- At this point you can taste water to check whether salt, sugar and lemon all have got mixed well.
If you feel the need to add more of any of this the right time will be before you add semolina to it.
- Once the water has started boiling for 5 to 7 minutes turn the flame on medium low again.
- Add semolina slowly to it (some at a time) and start mixing it quickly with spatula or it will form lumps.
Note : Slow flame and little semolina at time and mixing it quickly are the key for good upma :)
- Serve hot with sev / farshan of your choice / tea / cofee / juices or have it just plain.
