Baingan Bharta (Microwave recipe)


Spicy Tangy flavoured Baingan Bharta recipe. 







King of vegetable... Maharaja Baingan ... Baingan Bharta or bharte wala baingan... 

Whatever we call it we love it . Love it .. Just Love it :) 


Ingredients : 
1 bharte wala baingan (eggplant) 
2 to 3 tomatoes 
2 onions or 1 big onion 
1/2 cup green peas (frozen or fresh) - optional 
4 green chilis ( 2 for tempering , 2 while serving (optional) 
1 or 2 garlic cloves 
less then half spoon of grated ginger or cut it in small pieces 
1/2 tsp of garam masala. I have used market bought sabzi masala
1/2 tsp of red chili powder (prefereable kashmiri red chili powder) 
1/2 tsp of coriander cumin powder 
1/2 tsp of turmeric powder 
less then 1/2 tsp of cumin seeds 
pinch of asafetida 
salt to taste 
pinch of sugar 


How to prepare : 

  • As this is a microwave recipe we will need a microwave safe bowl to roast the baingan.
  • Wash the baingan and wipe it with a cloth. 
  • Slit the baingan from 4 sides straight with a knife and also on the top and apply oil and roast / cook in microwave for about 10-12 minutes (time may vary for different microwaves) 
  • The above is shown in the picture. 
  • Remove it from the microwave and with the help of knife check whether it is cooked. If not you can put it for another 5 minutes until cooked. 
  • Chop garlic, ginger, green chillis, onions and tomatoes in small pieces 
  • Heat oil in a pan and add cumin seeds and asafoetida 
  • Add ginger, garlic, green chilis and saute till it turns little brown. 
  • Add onions and saute. 
  • Add green peas ( adding green peas at this point will maintain the green color . as it is getting cooked in the oil . As the bharta turns red because of tomatoes and red chilis i like to add green peas to it :) Try it out and you will surely love the taste too. 
  • Add chopped tomatoes and saute again. 
  • Chop and smash the baingan with the help of knife / fork or with hands. 
  • Add in garam masala, chili powder, turmeric powder, corinder powder and mix well. 
  • Add the mashed baingan to the onion tomato tempering and mix everything nicely. 
  • Add salt and sugar and let it cook for another 5-7 minutes 
  • You may add little oil and water to make it soft. 
  • Serve it with parathas, rotis, rice and enjoy with chilis and onions. 
  • Ummm ... mouth watering !
