Vegetable Stir Fry

The rainbow platter - Vegetable stirr fry





The best starter or just to have a crunchy munchy anytime stomach filling. Goes well with soups or even noodles. I love them to have it with soups.

Loaded with lots of colorful vegetables and with some piecess of paneer or tofu (as per your preference). 

Less then 20 minutes you can have an healthy mouth watering rainbow platter on your dining. 

Trust me ! Not to be missed ! 

Preparation Time   : 10 minutes 
Cooking Time       : 10 minutes 

Ingredients : 
  • 3-4 capsicums (i used 1 color capsicum - green, red, yellow, orange) - sliced long 
  • 1 onion - sliced long 
  • 5-6 baby carrots - sliced long 
  • 5-6 edamame - sliced long 
  • 5-6 baby corn 
  • 1/2 cup of green peas 
  • 8-10 pices of tofu or paneer 
  • 2 green chilis slit them long 
  • 3-4 small pieces of garlic 
  • 3-4 small pieces of ginger 
  • 1 tsp total or oregano, chili flakes (herbs of your choice) 
  • 1 tsp of oil 
  • in a bowl mix 1 tsp of vinegar, soy sauce, chili sauce (red or green or both) and set it aside. 
  • salt to taste 
Note : you can even add more veggies like zuccini, asparagus , french beans, sweetcorn etc. 

How to prepare : 
  • Heat a tsp of oil and on a medium high flame fry paneer or tofu till golden brown and crisp. 
  • Remove the fried paneer and keep them aside 
  • Add a tsp of oil if required and add chili, ginger and garlive and saute. 
  • Keep the flame on medium high throughout the cooking for stir fry. If you slow down the flame then the veggies will start leaving water and will go mushy. 
  • Add onions and saute till little transculent. 
  • Add color capsicums and saute again 
  • Add corn, edmame, green peas, carrot and add salt and saute again. 
  • Add fried paneer to this and add the soy sauce mixture. 
  • Toss everything upside down very well so the sauce gets mixed nicely with all veggies. 
  • Add herbs to it and serve. 
  • Serve hot with soups or noodles or even garlic breads. 
  • The rainbow platter is ready :)
