Dal Baati Recipe

Dal Baati - Authentic Rajasthani Platter



Feeling Nostalgic !!! This recipe always reminds me of my mom who use to make excellent baati's in microwave and on Baati Cooker.

I have made these baatis in electric range oven and it has turned out to be awesome.

Here I have used a combination of two dals which is udad dal + green whole moong and I have made my dal little mild but you can make it spicy too.

You can also make panchmel dal with this baati by mixing chana dal, yellow green split moong dal, toor dal and udad dal.

Ingredients for Baati :

  • 2 cups whole wheat flour 
  • 1/2 cup semolina or rava 
  • 1/2 tsp of ajwain seeds 
  • 1/4 tsp of baking powder 
  • 1/2 tsp of baking soda (optional - I have used only baking powder) 
  • 1/2 cup of oil or ghee  ( I have used oil) 
  • water to knead the dough 
  • salt to taste 
Ingredients for Dal : 
  • 1/2 cup of udad dal 
  • 1/2 cup of whole green moong
  • salt to taste 
  • 2 cloves of garlic 
  • 1 tsp of grated ginger 
  • 1 or 2 dry red chili 
  • 1 tsp of cumin seeds 
  • pinch of asafoetida 
  • 1 tsp of red chili powder 
  • 1/2 tsp of turmeric powder 
  • 1 tsp of coriander cumin powder 


Baati Recipe & Baking Process :

  • Mix all the ingredients of dough in a mixing bowl and knead a dough which is little hard not the regular roti dough. Use very little water while kneading it and use water only if needed. This takes only half glass or 1 cup of water to knead. Cover it and keep it aside of 15-20 minutes
  • Dived and make medium size balls of the dough 
  • Preheat the oven on 350 degree F and brush the baking tray with oil and arranege the dough (round balls) on the baking tray. 
  • Let the baatis get cooked / baked nicely on one side which should take about 15-20 minutes and remove it brush it with oil and again turn it upside down to cook it from the other side for 15-20 minutes. 
  • Cook the baatis till they turn golden brown and are nicely done. 
  • Remove the baatis and dip then in 1 cup of ghee or you can also remove the baatis in a bowl and pour some ghee from the top on baatis. 
  • Note : I have used oil in  kneading and baking process of baati as we have to use ghee later for dipping baatis. 
Dal Recipe :

  • Wash udad dal and moong dal and pressure cook them for 3 whistles 
  • For tempering heat some ghee , add asafoetida, cumin seeds, red chili , ginger and garlic , red chili powder, turmeric powder, coriander cumin powder and add it to dal and let the dal cook on medium flame. 
  • Add some water and salt. 
  • You can either make the dal semi-liquid or liquid as per your choice. 
Serve hot baatis with dal and onion, lemons , ghee.
