Aloo Paranthas

Aloo Paranthas 




I have always loved Punjabi Cuisine may it be dal makhani , paranthas or saag.
My curiosity increased when recently had a parantha and couldn't stop myself making one at home.
With the help of family friends here I am sharing the dhaba style but homemade aloo paranthas with few ingredients matching my own taste.

Ingredients:
2 cups wheat flour
4 large boiled potatoes (boiled and peeled)
1/2 cup cooking oil. You may use less oil though
1/2 tsp amchur or chat Masala
1/2 tsp garam masala
3 4 chopped green chillis
Lemon juice
1/2 tsp grated ginger
1/2 ajwain seeds
Desi ghee for cooking paranthas
Salt to taste
Water for kneading
How to Prepare :
Peel boiled potatoes, refrigerate it for sometime, remove and grate them with cheese grater and keep aside for sometime.
Meanwhile knead dough by adding salt, ajwain seeds and nearly 2 to 3 tbsp of oil and with little water at a time start kneading the Dough. Once kneaded make round balls and keep aside.
In a mixing bowl add grated potatoes , salt, amchur or chat Masala ,grated ginger,chopped chili's, lemon juice and mix well.
NOTE I have not added any turmeric powder , red chili powder or coriander cumin powder
Heat tawa or nonstick pan and start rolling paranthas , stuff potato stuffing close from all the ends and roll them again and cook paranthas from both the sides with Desi ghee
Have paranthas with pickle,curd , chili's
