🌿 HEALTHY & DELICIOUS LAUKI KOFTA CURRY! 🌿


Tired of the same old bottle gourd recipes?

You'll be amazed at how this simple vegetable transforms into rich, melt-in-your-mouth koftas simmering in a creamy gravy.

Perfect for a cozy family dinner!

🍅 Ingredients:1 medium Lauki (Bottle Gourd), peeled & grated
1 medium onion, 2 tomatoes, & a few cashews (for gravy)
1 tsp Ginger Garlic Paste
½ tsp turmeric powder
1 tsp coriander & cumin powder 1 tsp red chilli powder &
½ tsp cumin seeds
3 tbsp besan (gram flour)
2 tbsp cooking oil / ghee
Salt to taste
½ tsp garam masala (optional)
1 tsp whole spices (cloves, 1 cardamom, 1 cinnamon, 1 bay leaf)
Fresh Malai (for garnishing)

👩‍🍳 How to Make the Koftas:

In a bowl, sprinkle 1 tsp of salt over the grated Lauki and let it rest.
Squeeze the grated gourd tightly to extract the excess water.
DO NOT discard this water! Save it to adjust the consistency of your gravy later.In a mixing bowl, combine the squeezed lauki, besan, ginger-garlic paste, spices, and salt. Mix well and roll into small balls.Pro Tip: To make it healthy, I cook the koftas in an appe pan with just a few drops of oil until golden brown. You can also deep fry them if you prefer!

Preparing the Gravy :
Shallow fry the onions, tomatoes, and cashews along with your whole spices. Blend them into a smooth, rich paste.
Bringing It Together.

Heat oil or ghee in a pan.
Add cumin seeds and a bay leaf.
Add your blended gravy paste and cook until the oil begins to separate.
Add the koftas and mix gently.
Pour in the reserved lauki water to get your desired gravy thickness.
Let it simmer for a minute, then top it off with fresh malai!

Serve hot with your favorite parathas and sides!
