Ingredients
- Ragi Flour (Finger Millet): 1 cup
- Coconut Sugar: ¾ cup (ground to a fine powder)
- Cocoa Powder: 2 tsp
- Ghee: 4–6 tbsp
- Nuts: A handful of cashews and almonds (roasted and coarsely ground)
- Cardamom Powder: A pinch
Step-by-Step Instructions
- Prep the Nuts: Heat 1 tbsp ghee in a thick-bottomed pan. Roast the cashews and almonds until golden. Once cooled, grind them coarsely and set aside.
- Sweetener Prep: Grind the coconut sugar into a fine powder for a smooth texture.
- Roast the Flour: In the same pan, add the remaining ghee and ragi flour. Roast on a low-to-medium flame for 7–10 minutes. Stir continuously until the flour becomes aromatic and darkens slightly.
- Combine: Turn off the heat. While the flour is still warm, stir in the cocoa powder, powdered coconut sugar, ground nuts, and cardamom. Mix well for 1–2 minutes.
- Shape: Allow the mixture to cool until it’s comfortable to touch. Take small portions and roll them into firm, round ladoos.
- Store: Keep them in an airtight container to maintain freshness for up to 15 days!
