Onion Tomato Curry (Kanda Tamatar Subzi)

Serves                                  :               2
Ingredients                         :
·         4 -5 medium size onions - Cut into small pieces
·         2 onion greens and whites  
·         2 – 3 tomatoes – Cut into small pieces (note: if you are a fan of sourly taste you may add 1 more tomato to it).
·         1 Spoon Oil
·         ½ tsp mustard seeds 
·         2-3 curry leaves 
·         2 green chilies 
·         2 garlic cloves 
·         Pinch of asafoetida
·         Indian Spices (Turmeric  Powder, Chili Powder, Coriander Powder)
·         Salt to Taste
·         A pinch of sugar or jaggery

How to Prepare :
.          Cut the onions and tomatoes into small pieces
·         In a Nonstick Pan or Kadhai add 1 spoon of oil
·         Add googlmustard seeds and let it splutter, asafetida, curry leaves, chilies, garlic.
·         Let the mustard seeds splutter , sauté the chilies , garlic, curry leaves for a minute
·         Add onions and put the flame on medium high and sauté till the onions turn pink.
·         Add Onion Greens and sauté
·         Now add tomatoes, salt and sauté and cover it for 7 – 10 mins or until cooked.
·         Now add Turmeric Powder, Chili Powder, and Coriander Powder to it and mix well.
·         You may add little sugar or jaggery for the little sweet taste.
·         It goes well with Roti / Parathas / Bhakris and even rice.
