Ingredients :
- 300 gms Bhindi (Okra) (around 1/2 lb)
- 1/2 bunch corriander leaves
- 1/2 cup roasted peanut crush
- 1/2 tsp sesame seeds
- 1 tsp turmeric powder
- 1 1/2 tsp of red chili powder
- 1 1/2 tsp of coriande powder
- 1 tsp of salt
- 1 tsp of sugar
- 1 lemon to sqeeze
- 1/2 cup of chickpea flour (besan)
- 2 tsp of oil for stuff masala
- 1 tsp of oil for frying
How to prepare :
- Wash the okra in colander and wipe it with a clean cloth
- You may keep the okra whole or cut them into two pieces
- Remove the top and bottom of the okra and slit it a bit from middle for the stuffing to be filled in it
How to prepare stuffing masala :
- Mix chickpea flour (besan), peanut crush, corrriander leaves (cut them small), salt, sugar, red chili powder, coriander powder, turmeric powder, sesame seeds, oil and squeeze lemon. Mix everything well.
- Taste the masala and check for salt, sugar, spices etc and if you find something missing add it.
- Heat a tsp of oil in a pan and start stuffing the bhindis and adding them one by one to the pan. With the help of spatula just toss them upside down slowly.
- Make sure that you dont break the bhindis
- Put the flame on medium high and keep tossing it in 2-3 minutes.
- Add little salt just for bhindis to get cooked.
- You may close the lid for a minute and keep it open later on the medium high flame for the bhindis to get cooked.
- Add the remaining stuffing masala to the bhindis.
- Add a spoon of oil for the masala also to get cooked nicely.
- Serve it with Parathas / Rotis / Rice.
