Bhindi do Pyaza

Preparation Time: 10 minutes 
Cooking Time. : 10 minutes
Ingredients: 
500 gms okra or bhindi cut into small .. any shape
1 onion diced
1 tomato diced
Salt to taste
Pinch of asafoetida
Pinch of sugar (optional)
1/2 tsp cumin seeds
1/2 tsp of turmeric powder
1/2 tsp of coriander powder
1/2 tsp of red chili powder
1/3 tsp of amchur powder (optional)
How to prepare :
Wash okra and wipe it with a clean cloth and cut them into small ,medium ,big pieces any shape you like.
Cut onion and tomato into cubes
Heat a oil in a wok, add asafoetida,cumin seeds ,Onion and sauté on a medium flame.
Onions need not to be turn translucent.. add okra or bhindi ,salt and saute on a medium flame and let the bhindi get cooked. It ahpukd talk approx 7 to 10 minutes. Do not cover the lid as it may leave water and start getting mushy. Add tomato,
turmeric ,chilli,coriander,amchur,garam masala and mix everything well. Add a pinch of sugar as amchur is little sour. Serve it with Rotis,parathas.
