Pasta in Red and White Sauce

Pasta is an Italian Cuisine and Penne is basically a cylindrical shaped pasta. 

Here is my version of the cheesy, the creamy penne in a red and white sauce with loads of vegetables. 

Ingredients for Penne Pasta : 

  • 2-3 cups of penne pasta 
  • 3 cups of water 
  • 1 tsp of salt 
  • 1 tsp of olive oil 
Ingredients for White Sauce 
  • 2 spoons of butter 
  • 1 cheese square slice 
  • 1 tsp of all purpose flour 
  • 2 cup milk 

Ingredients for Red Sauce 

  • 2 tomatoes to puree
  • 1 tsp of tomato sauce 

More Ingredients : 

  • 2 tsp of butter 
  • 1 tsp of olive oil 
  • 1 cup of boiled sweet corn kernels 
  • 1 cup spinach leaves cut small 
  • 1 cup diced bell peppers (I used red , yellow, orange) 
  • 1 spoon each of blackpepper powder, oregano , basil leaves, chili flakes 
  • Grated cheese to garnish 
  • 2 garlic cloves 


To Cook / Boil Pasta : 

  • Heat 2-3 cups of water in a big wok. Once the water is enough hot add salt, oil and pasta and cook for around 8-10 minutes or till the pasta are completely cooked. 
  • Remove the Pasta in a colander draining the excess water. 
  • Add little oil and mix well so that the pasta do not stick. 
To prepare Red Sauce 
  • Add 2-3 tomatoes in 2 cups of water till the skin of tomatoes are soft and you can see the skin of tomatoes getting removed easily. 
  • Remove the tomatoes aside till they are cool enough. 
  • Once the tomatoes are cool enough remove the skin of the tomatoes and make a tomato puree by blending them in a blennder or you can even crush them a bit by a fork. 
  • Remove the seeds 
  • Add 2 tsp of tomato sauce to the puree and keep aside. 
  • Red sauce is ready 
To prepare White Sauce 
  • Heat 2 tsp of butter in a nonstick pan or a wok and add 1 tsp of all purpose flour (maida) and saute for a minute 
  • Add milk gradually and stir occasionaly 
  • Add cheese slices and mix everything nicely 
  • Let the milk come to the boil and you will see the mixture getting thicker. 
  • Add Black pepper powder little bit and keep aside. 
  • White sauce is ready 
How to prepare : 
  • Heat 2 tsp of butter 
  • Add garlic cloves and saute on a medium flame 
  • Add Red Sauce, salt to taste (very little salt) and saute again for 2-3 minutes 
  • Add bellpeppers, spinach , sweet corn and mix well. 
  • Add White sauce and mix upside down and let it simmer for 2 minutes till the sauce gets mixed nicely and you may see the colour pink of the sauce. 
  • Add oregeno, basil , chili flakes, blackpepper powder 
  • Add Boiled pasta and mix everything well 
  • Add Grated cheese and olive oil 
  • Serve hot
