Corn Palak Recipe

Corn Palak is one of the delicious gravy dish to be had with parathas / nans / rice. The crunch corn in gravy is surely a taste bite !

Preparation Time : 15 minutes
Cooking Time :  15 minutes
Serves  : 2

Ingredients :

  • 250 gms palak 9 O.z
  • 1 onion diced 
  • 1/2 tomato or 1 tomato diced 
  • 1 cup of sweet corn 
  • 2 green chilis (can add more as per your taste) 
  • 2 garlic cloves (can add more as per your taste) 
  • 1/2 tsp of cumin seeds 
  • some ice cubes 
  • 1/2 tsp of red chili powder 
  • less than 1/2 tsp of turmeric powder (optional) 
  • 1/2 tsp of garam masala (optional) 
  • lemon juice 
  • salt to taste 
  • pinch of sugar 
How to prepare : 

Cut the Palak into small pieces and diced onion and tomatoes 
Steam the Palak and drain the water. 
In a bowl add drained palak and pour cold water and some ice cubes and leave it for 10 minutes. This helps the palak to retain its green color. 
Drain the palak and grind it to gravy. 
Steam / Boil Sweet Corn Kernels too for 5- 7 minutes 
In a wok or a pan add ghee / oil or butter add cumin seeds, green chili, garlic cloves and saute 
Add onions and saute till they turn brown / pink. 
Add tomatoes and saute again. 
Add lemon juice, salt, pinch of sugar, turmeric powder, red chili powder and garam masala and saute everything nicely till the masala mixes and gets coated on the onion and tomatoes.
Add half corn kernels now and keep half for putting it later once the palak is cooked 
Add 2-3 drops of water so it doesnt stick the bottom of the pan. 
Now add palak gravy and mix everything nicely. 
Add little water if required.
Remove it in a serving bowl and add the remaing corn kernels. 
Add little graterd cheese just to decorate (optional)
