Healthy Version of having a multigrain mixed vegetable parathas. Can serve in office tiffins or dinners and even kids who dont prefer to have vegetables. This is the healthy way of having loads of vegetables. I have used multigrain flour for its nutitional value.

Ingredients :
- 2 cup Multigrain Flour or simple wheat flour
- 1 Large Potato (Boiled and Mashed)
- 1 onion diced
- 1 carrot diced
- 8-10 florets of broccoli
- 8-10 florets of cauliflower
- 1/2 cup of swet corn kernals
- 1/2 cup of green peas
- 2 onion greens / whites
- green bellpepper (optional)
- 1/2 tsp sesame seeds
- 1/2 tsp carrom seeds (optional)
- 1/2 tsp cumin seeds
- Note (you can add all the above seeds or any one of this)
- 1/2 tsp of turmeric powder
- 1/2 tsp of corriander powder 5-7 whole coriander seeds
- 1/2 tsp of red chili powder
- 2-3 green chilis (cut into small pieces) - optional (as this may make paratha spicy)
- 1/2 lemon to squeeze in vegetable stuffing
- salt to taste
- pinch of sugar to taste
- ginger garlic paste (optional)
How to prepare :
- Knead the Paratha dough with 2 spoons of oil, 1/2 spoon of salt and 1/2 glass of water and keep aside for 30 minutes.
- Pressure cook all vegetables except onions and bell pepper if adding for 1 whistle or you can even boil them in microwave for 20-30 minutes till they become soft.
- In a Mixing Bowl mash potato and add all the boiled vegetables and onions, onion green and slight mash them with the help of masher.
- Add salt, turmeric powder, chili powder, coriander powder, sesame seeds, carrom seeds, cumin seeds , sugar, lemon , ginger garlic paste and mix everything well.
- If you dont want it too spicy dont add carrom seeds and green chilis to the stuffing.
- Divide kneaded dough into equal 6-8 balls and start rolling it round in form of paratha.
- Fill the vegetable stuffing in it and cook it from both the sides on Nonstick Tawa or Pan while adding a drop of oil or ghee or butter.
- Decorate it with grated cheese and serve it with ketchups, chutneys, yogurts.
