Sambar Recipe

Preparation Time    : 30 minutes 
Cooking Time         : 45 minutes 
Serves                    : 2-4 

Ingredients : 

  • 1 1/2 cup toor dal 
  • 2 cups vegetable stock (drumsticks, brinjal, onion, potato, tomato, bottlegourd) 
  • 2 tsp of sambar powder 
  • 1/2 tsp of turmeric powder 
  • 1/2 tsp of red chili powder 
  • 1/3 tsp of fenugreek seeds 
  • 1/3 tsp of urad dal 
  • 5-6 cury leaves 
  • 1 dry red chili 
  • 2 green chilis 
  • 1/2 lemon juice 
  • 1 tsp ghee for tempering 
  • 2  tsp tamarind concentrate (diluted) 
  • salt to taste 
  • 1/2 tsp mustard seeds 
  • 1/2 tsp coconut powder to add in sambar 
  • sugar or jaggery 1/2 tsp 
  • some coriander leaves 


How to prepare : 


  • Wash and soak toor dal (pigeon peas) for 1/2 and hour 
  • Pressure cook the dal with 2 glass of water for 3 to 4 whistles 
  • Cut the vegetables into small pieces and keep aside with little water. 
  • Drum sticks cut into two or three small equal parts you can wash and keep it as it is.
  • Heat ghee in a wok , add add mustard seeds , fenureek seeds, urad dal curry leaves and dry red chilli and saute 
  • once the seeds splutter add the vegetable stock, turmeric powder, salt and saute on a medium high flame till they are half cooked. Add dal, tamarind concentrate, red chili powder, turmeric powder, salt, sugar , sambar powder , lemon juice and mix everything well.
  • Let the sambar simmer and cook on a medium high flame for about 15-20 minutes. 
  • Add coconut powder , corriander leaves and mix well. 
  • Serve hot with Idlis, Dosas, Appams, Rice
