Vegetable Pulao

Quick , Simple, Mild , Anytime Vegetable Corn Pulao. 

Just love to have the non-spicy dish which goes well with soups, salads , raitas try this out !! 

Preparation Time : 20 minutes 
Cooking Time      : 30 minutes 
Serves                  : 2-4 

Ingredients : 

  • 1 cup Basmati Rice (Long Grain) 
  • 1 large potato cut in long or diced 
  • 1 cup of mix vegetables ( i have used cauliflower, carrot, green peas, sweet corn). 
  • 1/2 tsp of ghee 
  • 1 tsp of oil 
  • 2 cloves 
  • 1 bay leaf 
  • 1/2 or less cinamon stick 
  • 1/2 tsp of cardamon powder to sprinkle 
  • 1/2 tsp of turmeric powder 
  • 1/2 tsp or less of red chili powder 
  • 1/2 tsp of  garam masala or pav bhaji masala 
  • few corriander leaves 
  • 1 tsp of cashews 
  • 1 tsp of raisins 

How to prepare : 

  • - Wash and soak basmati rice for half an hour 
  • - Cut and wash the vegetables 
  • - Heat a nonstick wok and add ghee, oil 
  • - I prefer to add the whole garam masala first before adding cumin seeds 
  • - Add bay leaf, cloves and saute on a medium low flame 
  • - Add cumin seeds and saute again 
  • - Add potatoes and rest veggies and saute and mix well 
  • - Add salt, turmeric powder, chili powder, Cardamon powder, garam masala, and add rice with 1 1/2 glass of water 
  • - Mix everthing nicely and add a spoon of oil to it 
  • - Cover it with lid and let the rice cook on a medium low flame till the water is evaporated and rice are cooked well. 
  • - Once the rice are about to get cooked add cashews and raisins. 
  • - Decorate with carrots, corriander leaves. 
  • - Serve hot with raitas, soups , salads , plain yogurt
