Baingan Fry

Cooking Time : 10 mins
Serves : 2-4
Ingredients :
- 5-10 small brinjals or 4 long brinjals
- 2 tsp of oil
- 1/2 tsp of mustard seeds
- 1/2 tsp of turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp of cumin coriander powder
- garlic paste (optional)
- pinch of asafoetida
- salt to taste
- pinch of sugar
- some lemon juice
How to prepare :
- Wash and cut the brinjals into flat round shape in water
- Heat 2 tsp of oil in a pan add mustard seeds , turmeric powder
- Add brinjals and toss it upside down.
- Add salt and cover it and let the brinjals get cooked on a medium high flame
- Open the lid after 5-7 minutes add chili powder, cumin coriander powder, sugar and lemon juice and cover it for 2 more minutes.
- Brinjals dont take much time to cook.
- Decorate it with coriander leaves and serve hot.
- Serve it with Rotis, Bhakris, khichdi and kadhi :)
