Baingan Fry

Baingan Fry 

Preparation time : 10 mins 
Cooking Time : 10 mins 
Serves : 2-4 

Ingredients : 

  • 5-10 small brinjals or 4 long brinjals 
  • 2 tsp of oil 
  • 1/2 tsp of mustard seeds 
  • 1/2 tsp of turmeric powder 
  • 1/2 tsp red chili powder 
  • 1/2 tsp of cumin coriander powder 
  • garlic paste (optional) 
  • pinch of asafoetida 
  • salt to taste 
  • pinch of sugar 
  • some lemon juice 

How to prepare : 
  • Wash and cut the brinjals into flat round shape in water 
  • Heat 2 tsp of oil in a pan add mustard seeds , turmeric powder 
  • Add brinjals and toss it upside down.
  • Add salt and cover it and let the brinjals get cooked on a medium high flame 
  • Open the lid after 5-7 minutes add chili powder, cumin coriander powder, sugar and lemon juice and cover it for 2 more minutes. 
  • Brinjals dont take much time to cook. 
  • Decorate it with coriander leaves and serve hot. 
  • Serve it with Rotis, Bhakris, khichdi and kadhi :)
