Bhinda nu shaak or bhindi sabzi

Bhindi or lady finger. You will find in one or the other gujrati home for their sunday lunch or when we have guest at home. No gujrati thali is complete without this for me atleast :) 

Lets get started with this gujju style bhindi stir fry. Love the color ! Love the crisp or karari bhindi :) 

Preparation Time : 15 minutes 
Cooking Time : 15 minutes 
Serves : 2 

Ingredients : 
  • 500 gms bhindi or 1/2 kg 
  • 2 garlic cloves 
  • 1 tsp of oil 
  • 1/2 tsp of jeera powder 
  • 1/2 tsp of cumin seeds (optional) 
  • 1/2 tsp of cumin coriander powder
  • 1/2 tsp of turmeric powder 
  • 1/2 tsp of red chili powder 
  • pinch of sugar (optional) 
  • pinch of asafoetida 
  • salt to taste 

How to prepare : 
  • - Cut the bhindi vertical slit or the shape you love 
  • - Heat a tsp of oil in a nonstick pan and set the flame to medium high 
  • - Add cumin seeds and asafoetida and saute 
  • - Add garlic cloves and saute till little brown 
  • - You may also add green chillis (optional) 
  • - Add bhindi and fry on a medium high flame and keep sauteing 
  • Dont cover the lid orelse it will start getting sticky 
  • After few minutes (5 minutes or so) add salt and keep sauteing 
  • Let it get cooked and add cumin powder, turmeric powder, chili powder, coriander cumin powder, pinch of sugar and mix well 
  • Keep the flame on for another 5 minutes and let it cooked nicely till it turns little crispy 
  • Serve it with rotis, bhakris or rice dal. 
  • I prefer to have it as it is too :)
