Ingredients :
- 1 cup kabuli chana
- 1 big onion cut into small pieces
- 1/2 tsp of garlic paste
- 1/2 tsp of ginger paste
- 1 small cinamon stick
- 1 bay leaf
- 1 or 2 green elaichi
- 1 dry red chili
- 1 tsp of chole garam masala
- 1/2 tsp of elaichi powder
- 1 tsp of red chili powder
- less then 1/2 tsp of amchur powder
- salt to taste
- 1 tsp of lemon juice
- 1/2 tsp jeera powder
- pinch of asafoetida
- 1 tsp of cofee beans (this is require to tie in a cloth) and put in pressure cooker for the color
- 1 tsp of oil to cook
- pinch of sugar
How to prepare :
- Wash and soak the chole overnight or for 6-8 hours
- In a pressure cooker add chole chana 1.5 glass of water and in a muslin cloth add 1 tsp of cofee or tea and tie it and put in the cooker (as shown in the picture)
- Pressure cook chole for around 3-4 whistles or until cooked.
- Let the chole be soaked in the pressure cookere for 1/2 and hour or so till it catches the coffee color (as shown in the picture).
- Heat oil in a sauce pan and add cinamon stick, bay leaf, cardamon (elaichi) , red chili and saute.
- Add asafoetida , cumin seeds and saute
- Add onions , ginger garlic paste and saute till they turn pink / translucent
- Now add chili powder, amchur powder, chole masala , salt and saute
- Let the masala cook till 5-7 minutes. Add little water (1/2 cup)
- Add boiled chole to the gravy and add lemon juice
- Add around 1 glass of water and mix everything nicely
- Check the masala , salt etc is ok and let the chole simmer on medium slow flame for around 10 minutes.
- Add pinch of sugar.
- Serve it with Puri, Bhature and rice with sliced onions and lemon
