Vermicelli Upma

I love this Upma :) Quickest and easiest and many times I have it in lunch too. Quick way to treat yourself.

Preparation Time : 10 minutes
Cooking Time : 10 minutes
Serves : 2

Ingredients :

  • 1 cup vermicelli 
  • 1 1/2 cup water 
  • 1 small bowl of mix veggies (Sweetcorn, green peas, carrots,frenchbeans) 
  • 1 small onion (optional) - I have not used it in this recipe 
  • 3-4 green chilis 
  • 5-7 curry leaves 
  • 1 tsp each of urad dal and  chana dal 
  • salt to taste 
  • sugar to taste 
  • 1 tsp of lemon juice 
  • 1/2 tsp of ghee or oil 
  • less then 1/2 tsp of turmeric powder 
  • less then 1/2 tsp of chili powder 

How to prepare :

  • - Heat a work or a nonstick pan add ghee to it. 
  • - Add vermicelli sev and roast for about 2-3 minutes or till they turn golden brown 
  • - Remove the sev and keep them aside. 
  • - Add some more ghee or oil if not already available in the pan and add green chili and curry leaves first and once they are done add urad dal and chana dal till it turns brown. 
  • - Add onions and let it turn pink (if you are using onion add at this point). 
  • - Add veggies and salt and roast for a minute on a medium high flame. 
  • -Add water , little more salt, sugar, lemon juice and let water come to boil 
  • - Add roasted vermicelli and mix well. 
  • - Add less then 1/2 tsp of turmeric powder and red chilli powder. 
  • - Mix and cook till the water is absorbed. 
  • - Serve hot
