Sev Khamani - Gujrati Farshan

Sev Khamani




Sev Khamani is a popular gujrati farshan. It can be made in two ways either by soaking chana dal and then have it coarsed powder and saute in oil or make the khamans and then crush them and add sev.
Here we are making it by making Khaman Dhoklas first and then crushing and making khamani.

Preparation Time : 45 minutes
  • 2 cup of besan / gram flour 
  • 1 cup of buttermilk or 1/2 cup of curd / yogurt
  • 1/2 tsp of turmeric powder
  • 1/2 tsp of salt
  • 3-4 tsp of sugar with 1/2 glass of water for sugar syrup
  • 1/2 tsp of ginger garlic paste (optional)
  • 1 1/2 tsp of mustard seeds.
  • 1/2 tsp of cumin seeds (optional) 
  • 1/2 tsp of sesame seeds 
  • 1/2 tsp of baking soda
  • 4 tsp of oil
  • few green chilis
  • few curry leaves
  • few fresh pomegranate  seeds 
  • pinch of asafoeida 
  • some coconut powder 
  • some coriander leaves
  • 1/2 lemon to squeeze 
How to prepare :

  • In a mixing bowl add besan, salt, ginger garlic paste, salt, turmeric powder and yogurt or buttermilk and mix well.
  • Mix nicely as there should be no lumps. Set this mixture aside for half an hour
  • In a meanwhile grease a plate with oil and in a big bottom wok heat 2 glasses of water. 
  • Add pinch of baking soda or eno fruit salt to the besan mixture and sieve it with a spoon till it is smooth. 
  • Add 1 tsp of oil to the batter . Oil helps dhoklas to be soft.  
  • Now pour the batter in the greased plate and steam the dhoklas. 
  • Cover it with a lid. This process may take around 10 minutes. 
  • For sugar syrup : Add 3-4 tsp of sugar in 1/2 cup of water and let it simmer and Dont make the syrup to thick. It should be watery only just the water should get sweetened. 
  • Check the dhoklas with the knife and if the knife comes out clean then the dhoklas are done. if not put for some more time. 
  • For tempering put oil in a small wok add  chillis, curry leaves and mustard seeds, cumin seeds,sesame seeds,asafoetida and let it splutter. 
  • Remove the dhoklas and keep aside adding 1-2 tsp of sugar syrup on it and the tempering. 

  • For Sev Khamani you need to crush the dhoklas and then add sev, pomegranate and coconut powder to it. Squeeze lemon if required.
Note : You can add sev , pomegranate seeds , coconut powder and corriander leaves while serving and not before otherwise they may go soft.
