Tindora nu shaak or sabzi

Tindora nu shaak  (Tiffin recipe)

Tindora or Tendli or Ivy Gourd sabzi which is one of the regular menu dish , lunch or tiffin sabzi.

Here I have tried making it more tastier with a little twist from the regular sabzi.




Here is the recipe.

Preparating Time             : 10 minutes
Cooking Time                  : 15 minutes

Ingredients :

  • 500 gms ivy gourd or tindora 
  • 1/2 cup of peanut crush 
  • 1 tomato diced 
  • 1 tsp of oil 
  • 1 tsp of garlic paste (optional) 
  • salt to taste 
  • less than 1/2 tsp of turmeric powder 
  • 1/2 tsp of coriander cumin powder 
  • 1/2 tsp of red chili powder 
  • 1/2 tsp of garam masala 
  • 1/2 tsp of mustard seeds 
  • pinch of asafoetida 
How to prepare :
  • Wash and slice tindora into long pieces 
  • Heat oil in a pan and add asafoetida and add mustard seeds 
  • Add tindora or tendli and saute for few seconds 
  • Add semi crushed peanut powder and add salt , saute again. 
  • Cover it and let the sabzi get cooked on a medium flame for 5-7 minutes 
  • Open the lid and check whether it is done. if not then put again for 5 more minutes. 
  • Once you find the tindora turning soft add garlic paste, turmeric powder, chili powder, coriander cumin powder, garam masala and tomatotes.
  • Cover the lid again for 2 minutes for tomatoes and masalas to get absorbed nicely and give. 
  • Add jaggery and saute again. 
  • Serve it hot with Parathas, Rotis. 
  • I love to eat it with plain rice.
